Veggie Pancakes

These turned out pretty good and were simple to make and can be made from practically anything in your house!

2 cups shredded veggies (I used zucchini, carrot, 1/2 a small potato, red bell pepper)
1 tablespoon flour
2 eggs
pinch of salt

Combine all the ingredients.
 Place some olive oil in the pan (I find that extra virgin olive oil does not work well at high temps) and drop a large spoonful in pan.  Cook until browned on both sides, take off and put on paper towel.
 You can serve with sour cream or applesauce, depending on if you want sweet or savory, but I found serving it with nothing was JUST fine.  Healthy, easy, and delicious!
